Our journey to producing real fruit vinegars was serendipitous. Vinegar has been made from grape wines since the beginning of recorded history, however, as a foodie, the idea of combining unique fruit flavors with the natural tartness of vinegar began to strike a creative cord. It's not a new idea. The marriage of sweet and tart flavors is well established (there is even a candy named after it!) but vinegars highlighting both a fruit's unique flavor and the vinegar's acidic qualities are far less common. So our journey began - the quest to bring together the flavor of the fruit with the tart expression of vinegar.
After creating these unique vinegars, we had to learn how to use them. Once we stopped treating them like vinegar and began using them as the foundation for sauces, glazes, and dressings, the world became a better place.
